Recipes from Our Bed and Breakfast

At Luther Ogden Inn, we take pride in featuring New Jersey SLO (seasonal, local, organic) food in our always homemade breakfasts. We grow our own fresh herbs, tomatoes, zucchini, green peppers and onions.

Breakfast Cupcakes

20­ oz. package hash browns, thawed
2 eggs
4 T. flour
1 cup chopped deli ham
1 cup cheese (cheddar, jack or mozzarella)
1/2 cup Parmesan cheese

Lightly coat a 12­-cup muffin tin with non­stick spray. Mix all ingredients together. Divide potato mixture into each of the 12 muffin tins, and press onto bottoms and up the sides to form cups. Bake at 375 for 22-­25 minutes or until golden brown. Cool for 5 minutes and carefully remove potato cups. Set aside.

Scramble 12 eggs on top of the stove. Spoon the eggs into the potato cups. Top with a small dollop of sour cream and a piece of pimento or roasted red pepper.
